Home Made Noodles
3 Eggs1/2 tsp salt
2 cups flour
Mix all ingredients either by hand or in mixer until a stiff dough is made, adding more flour as needed. Then knead for about 2 minutes. Place on a floured surface and cover and let sit for 15-20 minutes (this makes the noodles more elastic). Then roll on a floured surface (or I like to use a silpat mat) as thin as you can get them. Then cut with a pizza cutter to your desired width and length. Once cut, cook in boiling water for about 3-5 minutes, then add to your soup broth or top with desired sauce.
Hey Jess these look awesome, I've always wanted to try making noodles so I think I will tonight. So this recipe, would you use this whole thing in your chicken noodle soup, like the one you posted, or would that be too many? Also instead of cooking these separate could you just throw them in your soup for the last 3 minutes of cooking or would they absorb too much liquid? Or could you just add extra liquid to plan for that? Sorry for all the dumb questions from your clueless about homemade noodles friend :)
ReplyDeleteHey Amy, Thanks for the questions. I use one whole batch for the chicken noodle soup and it is perfect! Also, if you cook them in your soup, it does soak up too much liquid. Do it seprate, it takes all your pans to make the dinner, but worth it :)
ReplyDeleteThanks for the great recipe, Rachel and I made them together and they were great, but we need to be careful to roll them out more evenly next time. Just a few were too thick, but for our first try, we were proud of ourselves!
